    My husband has been diagnosed with mild to moderate dementia, so I'm sure he'll end up in a wheelchair and possibly a care facility - so I understand completely. It still is sad to lose someone, even when it is expected.

    Hi Ruth, I saw your note on SpJews - not very many people post on that particular post. If you copy what you posted and hit the button for "Create a New Topic" you can start a whole separate post and you'll get more responses.

    If you aren't sure how to do that (I was SO confused how the website worked when I first got here!), let me know and I can do that for you - but if you can do it yourself, then as the person who made the post you'll get an email every time someone replies. So it's best if you can do it yourself, so you can see all the answers.

    I hope I've explained that part - it isn't easy without the page in front of me.

    I personally don't like to freeze cooked latkes, it changes the texture. I also don't like to keep them in the fridge, the next day they taste more like potato kugel and less like latkes. If I want to splurge calories on latkes, I usually reduce my recipe - so maybe one potato, one egg, a quarter of an onion. Something like that. And very little oil, just enough to fry the bottom but not all the way up the side of each latke. Drain and blot with extra paper towel. I like my latkes with a layer of no sugar applesauce and then a blob of nonfat Greek yogurt (instead of sour cream). I'll make a whole meal out of them - maybe four big latkes, the applesauce and yogurt - who needs more?

    Your idea of half a sufganiyot at a time is a good plan. Although I'm not a fan of doughnuts to begin with, so I usually skip them.

    Last, my condolences on the loss of your husband. I hope you're doing okay, I know this has been a horrible year with devastation all around. I lost my oldest cousin to Covid, as well as our favorite postal worker (who also was the father of one of my former students, so I got to know the whole family fairly well). But I am very sorry about your husband.

    May his memory be for a blessing.
