Roasting veges is the easiest! Just pick what you like or want to try, toss with a little oil, salt and pepper or lemon pepper, toss in chopped garlic or for fun, some garlic cloves and roast in the oven at 300 to 325 for about an hour. Keep tomatoes (except cherry toms), separate since they lose so much juice. I toss mine mid way through the cooking process. Yummy concentrated flavors! 3711 days ago
