The past is gone, the future is not yet here, and if we do not go back to ourselves in the present moment, we cannot be in touch with life. Thich Nhat Hanh

Ooh never thought about cooking risotto in the IP -- fun! I just need to get more creative and browse some recipe blogs. Happy Wednesday!

We should not fret for what is past, nor should we be anxious about the future; men of discernment deal only w/the present moment. Chanakya

Hi! Yes! I cook squash in the instant pot all the time. Mine is a 6qt size. Just pierce the skin multiple times, add a cup of water and the squash. Cook time varies depending on the size and type of squash (and some of it has been trial and error). For most kombucha squashes, I cook them on manual for 15-20-25 mins, depending on size, and then QR. Much easier to cut through the skin at that point. Super easy. I pretty much only use my IP for squash, hard boiled eggs and steel cut oatmeal, but it's so worth it to me to have. Maybe one day I'll experiment more and try some other things. lol.
