    2 of my favorite recipes. Let me know if you like them and what you think. emoticon

    Turkey Meatloaf

    2 lbs. ground turkey
    1 pkg Stove Top Stuffing mix (herb blend)
    1 large egg
    1/2 c water, tap
    1/4 ketchup
    Preheat oven to 350 degrees
    Mix all ingredients, but omit 1/8 c ketchup
    Form into a loaf and place in baking pan (make sure there is enough room around the edges)
    Glaze top with remaining ketchup
    bake at 350 for 45-55 minutes. inside should be 165 plus degrees before serving

    this is from the Sparks recipes
    I make this meatloaf cut it into 8 servings, put it in baggies and freeze. I have my main meal here in a jiffy. Just add fresh fruit and veggies and dinner is ready.

    Baked Apple Yogurt
    1 apple, chopped
    1tsp brown sugar
    1/4 to 1/2 tsp cinnamon
    1 c. non fat plain greek yogurt
    1 tbsp. chopped walnuts
    place chopped apple, brown sugar, cinnamon in a bowl, microwave on high for 2 minutes or until apple is cooked. pour yogurt on top, then top it off with the walnuts
    serves 1

    6.6g fat
    35 carbs
    4.4g fiber
    24.7 protein

    this recipe is from Weight Watchers
    On this recipe I use the Danon light-fit greek vanilla or the toasted coconut vanilla for the same amount of calories. Some times I don't have walnuts and will use almonds. I leave the skin on my apples I like it and its extra fiber.
