Still trying to change


I thought it was about time to change my introduction on here since it was about 2 years old and things have changed. I discovered Spark about 2 years or so ago and did really well on it until my husband and son lost their jobs. I became very depressed then and because of the loss of income I lost my Spark and stopped eating healthy and exercising for almost a year. I'm back on and I feel so much better. I have a torn meniscus in my left knee and since I've started taking better care of ...

I discovered Spark about 2 years or so ago and did really well on it until my husband and son lost their jobs. I became very depressed then and because of the loss of income I lost my Spark and stopped eating healthy and exercising for almost a year. I'm back on and I feel so much better. I have a torn meniscus in my left knee and since I've started taking better care of myself I have not been suffering as much from knee pain, and have started walking some without the cane and have even started dancing.

I'm a grandma of one and mother of 2 and have been happily married to my absolute best friend for 24 years.

Fitness Minutes: 6,031

My Goals:
Just getting myself healthier.

My Program:
 One day at a time baby, one day at a time.
1200 to 1500 calories
My 8 glasses of water per day.
At least a half hour of cardio per day. Which I will start to track daily.
Strength training daily.

    They sell celeriac in the produce sections of our local supermarkets, but I remember seeing it in produce stores in the Italian section of town decades ago (and wondering what the heck it was!).

    Hi, hope you are having a good weekend. Celeriac is celery root--it looks pretty weird, with tendrils coming off the top part... but if you peel it, you can boil it up and then mash it or even pan sautee it with a bit of butter/oil, salt, pepper, other spices (I like rosemary) to add flavour. French recipes often use it raw, sliced super thin (like paper thin) in salads, where it has a very strong celery flavor.
    For the butter, I brown a tablespoon in a non-stick pan till it is frothy and just before it burns and then throw in about 6-8 portions of mashed or cubed, boiled celeriac and stir it like crazy to try and get the butter flavour everywhere. At that point, if it needs more liquid to keep it from sticking, I start adding a tiny bit of water to the pan and keep stirring. Hope that is helpful.

    Hi Dear Friend:

    Just dropping in to say Hi! I've been pretty sick for a while and haven't even thought of loosing weight. Only feeling better. I'd you or anyone for some prayer and friendship, I guess needed more than anything else. I'm having some severe health problems and because I go to a free clinic I can only see the Dr. about every 3 months! I see Him tomorrow to find out what the MRI I had done in OCT. said. And I'm much worse than then. Could use a word of encouragement.
