I cut up one zucchini , toss in frying pan with some canola oil, green onion, Morton hot salt, throw in 2 eggs, scramble and add some Parmesan or feta on top, breakfast is done! Can be dinner, too. Report

I am surprised I don't remember having this as a child. And my Mom cooked. And I thought I had every vegetable there was and loved them all.. From beets to endive that we picked to kohlrabi. I use zucchini and summer squash now often. Saute it, bake it, skewer it or just chop and add to a salad or a pasta dish. Report
