Sometimes we don't have time to spend hours on a fancy dinner. That said, between driving kids to and from school and sports, fitting in a workout and running errands, everyone should still be able to enjoy a delicious, healthy meal come dinnertime. Here are some of our favorite simple, great-tasting meals ready in a flash. Just what you need when there's a lot on your plate.

I'll remember to shop for some couscous + vegetables + feta cheese for that dinner; I'm sure that I can mix something together out of that.
I know it may seem weird to skip the orignal recipes to avoid registering - it's probably a good site with good material! - but if I can't see any content of that site before registering, I'm keeping out of it. I must have a dozen different accounts on the net already (mails, nutrition sites, hobby-related stuff) and registering at sites for a single info would make me lose sight of half my accounts out there. Egg salad mixed with diced tomatoes from my neighbor's garden, plus Triscuit Thin crackers. Two tomatoes plus two eggs equals quick supper for me. I hate to cook! Report

Pizza! Pizza is Friday night fare at our house. For 30 years we have been attempting to duplicate the pizza made by the oldest pizza parlor in Knox County, Illinois, and once in a while, we come close! The restaurant has changed hands since my husband was a regular there, and the focus has changed to "Home of the spinach salad."
The crispy bean and cheese burrito is a cheap dinner I have been cooking a for a few years. It doesn't take near as long as it says.. and it's great!! I love it crispy I won't eat it any other way! Report

The recipes listed have way too much sodium and really aren't all that balanced in carb/protein, something I have to watch like a hawk.

My dinner last night was Pad Thai, with 1/2 cup rice noodles and packed with bean sprouts, green peppers and onions and spice. It was 300 calories with 35 carbs and 16 of protein! YAY me Report
WOW I wouldn't make this recipe. I made a spark recipe with whole wheat wraps, called chicken tacos with no cheese and fat free greek yogurt. Let me know if you want the recipe! Report
These recipes look pretty, sound interesting, but way too many calories and the prep time is exaggerated. The burrito recipe said 10 mins, but cook time alone for the rice is 10 mins. Report
These recipes are listed as healthy but they all have too much sodium for anyone to eat, diet or not young or old. It would be nice to get a recipe that you don't have to makeover once in awhile. Report
Tonight it's a roast chicken and roast red potatoes, carrots and broccoli. Our dessert/snack will be blueberries and fresh whipped cream. Report
